Texas Pulled Beef Sandwich topcook.tomathouse.com
Ingredients:
- 1400 gr. beef brisket
- Round hamburger buns
- 2 tablespoons of vegetable oil
- 5 cloves of garlic, pressed through a garlic press
- 1 onion, peeled and cut into thin half rings
- 1 tbsp chili pepper powder
- 2 tsp ground coriander
- 2 tsp ground cumin
- 1/4 cup apple cider vinegar
- 1.5 cups of water
- 1 can (410 g) of whole tomatoes in their own juice
- 2 cans whole chipotle peppers in adobo sauce
- 2 bay leaves
- 3 tablespoons blackstrap molasses
- Pickled jalapeno peppers for serving
- Coleslaw salad for serving
Preparation:
- Season the beef generously with salt and pepper to taste. Heat a large, heavy skillet over medium-high heat. Add vegetable oil and heat until smoking. Add the meat and cook, turning once, until browned on both sides, about 10 minutes. Transfer the meat to a slow cooker; keep the skillet on the heat.
- Add garlic, onion, chili seasoningAdd the cumin, coriander, and cumin to the pan juices and stir until fragrant, about 1 minute. Add the apple cider vinegar and simmer until almost completely evaporated, scraping the bottom of the pan with a wooden spoon. Add water and pour the mixture over the brisket.
Mash the tomatoes with your fingers and place them in the slow cooker; add the tomato juice, chipotle peppers, bay leaf, and molasses. Close the slow cooker and set the timer for a long cook, about 8 hours, until the tomatoes flake easily with a fork. Remove and discard the bay leaf.
- To serve, shred the meat with 2 forks and stir evenly into the sauce; season with salt and pepper to taste. Place the meat on a sandwich buns and serve with jalapeños and coleslawAnother great option is to wrap the meat in tortillas.
