Ingredients:
Turkey Taco Filling
- 500 g of ground turkey
- 1 tbsp olive oil, a little for greasing
- 1 small onion, chopped
- 2 cloves garlic, chopped
- 2 jalapeño peppers in adobo sauce, chopped
- 1 cup tomato sauce
- 1 tbsp. chili powder
- Table salt
- 1/2 cup water
Pork and pepper filling
- 500 g of minced pork
- 1 tbsp olive oil, a little for greasing
- 1/2 red bell pepper, chopped
- 1/2 yellow bell pepper, chopped
- 1 small green bell pepper, chopped
- 1 tbsp. ground cumin
- A little Tabasco sauce
- 1/2 tsp ground peppercorns
- 1/2 cup water
Taco
- 10 very thin folded in half flatbreads
- 2 heads romaine lettuce, torn
- 6 green onions, chopped
- Red plum tomatoes
- Salsa sauce
- Fresh pico de galo salsa, recipe follows
Pico de Gayo
- 3 yellow grape tomatoes, diced
- 2 small jalapeno peppers, seeded and chopped
- 1 small onion, chopped
- 3 tablespoons chopped cilantro leaves
- Coarse salt
- Mix all ingredients in a small bowl.
Preparation:
- Turkey Taco FillingIn a small skillet preheated to medium heat, add the oil and turkey meat. Fry the meat for 2 to 3 minutes, then add the onion and garlic. Cook the onion and meat together for another 3 to 5 minutes. Stir in the chili powder and tomato sauce. Season with salt to taste. Add 1/2 cup of water to the stuffing. Reduce the heat to medium and simmer until tender.
Filling with pork and peppersHeat a small skillet over medium heat; add oil. Add pork and cook until browned, 2 to 3 minutes. Add bell pepper and seasonings; season with salt. Reduce heat and cook the filling for another 5 minutes. Stir in water. Reduce heat to low to maintain warmth.
- To assemble the tacos, divide the tortillas among servings and fill with your choice of toppings. Serve the fillings in the pans they were cooked in. For a side dish, prepare rice with beans.
