Chinese Chicken Salad topcook.tomathouse.com
Ingredients:
- 1/2 cup fried chow mein noodles
- 450 g chicken thighs, boned
- 1 small head of cabbage Chinese cabbage (Napa cabbage), leaves cut crosswise into small pieces (approx. 450 g)
- 1 medium carrot, thinly sliced
- 4 green onions, cut into rings
- 100 g young green peas, cut into three pieces
- 1/3 tbsp. rice vinegar
- 2 tablespoons soy sauce
- 2 tbsp sweet honey mustard
- 1 tbsp grated ginger
- 3 tbsp. sesame oil
- Coarse salt
Preparation:
- In a medium bowl, prepare the salad dressing: Mix rice vinegar, soy sauce, sweet mustard and ginger.
- In a separate bowl, toss the chicken with 1/4 cup of the dressing and let marinate for 10 minutes at room temperature. Remove the chicken and pat dry. Discard the marinade.
- Preheat a grill or grill pan to medium heat. Sear the chicken on each side for 4-5 minutes. Transfer to a cutting board and let rest for 5 minutes. Cut the chicken into small pieces if necessary.
- In a salad bowl, combine cabbage, carrots, green onions, and green peas with sesame oil. Stir in the remaining salad dressing and chicken; season with salt.
Top with chow mein noodles.
