Fried Zucchini and Spinach Wraps topcook.tomathouse.com
Ingredients:
- 2 medium zucchini, cut lengthwise into 0.5cm thick pieces.
- 2 teaspoons olive oil
- 1/8 tsp salt
- A pinch of ground black pepper
- 1 cup quick hummus
- 4 whole grain thin flatbreads or lavash (about 22 cm in diameter)
- 1/4 cup toasted pine nuts
- 1 medium red bell pepper, thinly sliced
- 60 g spinach
- 0.5 cup red onion, thinly sliced into half rings
- 1/4 cup mint leaves
Preparation:
- Preheat a grill or grill pan to medium heat. Brush both sides of the zucchini slices with olive oil and season with salt and pepper. Grill until tender and golden brown, about 4 minutes per side.
- Spread with 1/4 cup. hummus for each pita bread. Sprinkle with 1 tablespoon of pine nuts. Top with 3 slices of zucchini, 2 pieces of red pepper, 0.5 cups of spinach, some onion, and 1 tablespoon of mint. Roll each pita bread and cut in half diagonally.
