Grilled turkey breast with coleslaw topcook.tomathouse.com
Ingredients:
- 1 tbsp. seasoning for marinating meat
- Coarse salt
- 600-700 g skinless turkey breast fillet
- 2 tbsp. Worcestershire sauce
- 1 tbsp olive oil, plus more for greasing the grill
- 1/3 cup mayonnaise
- 1/4 cup ketchup
- 4 cups shredded salad mix of red and white cabbage, carrots and onions
- 4 whole grain multigrain buns
Preparation:
- Preheat grill to medium. Place marinade and 2 teaspoons salt in a spice grinder or mortar and grind coarsely. Set aside. turkey meat Place the meat in a large bowl and rub it with the spice mixture on all sides. Add Worcestershire sauce and olive oil and coat the meat. Let the meat marinate at room temperature for 10 minutes.
- Meanwhile, mix mayonnaise and ketchup in a salad bowl. Add the chopped vegetables and stir.
- Brush the grill grate with olive oil. Place the turkey breast on the grill, cover, and grill for 5 minutes per side. Uncover and continue grilling, turning, until done. Check for doneness by inserting a thermometer into the thickest part of the breast; the thermometer should read 150°F (68°C).
- Remove the turkey breast from the grill and let it rest for 5 minutes, then slice the meat. Serve the turkey with coleslaw and whole-grain bread.
