Slow Cooker American Meatloaf

Ingredients:

  • 1 kg of minced meat (a mixture of beef, veal and pork)
  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 1 and 1/4 tbsp. ketchup
  • 2 tablespoons Worcestershire sauce
  • 4 green onions, finely chopped
  • 2 tbsp chopped fresh parsley + extra for serving
  • 2 tsp chopped fresh thyme
  • 350 g small fingerling potatoes, cut in half
  • 3 carrots, sliced ​​2.5 cm thick.
  • 1/4 cup lightly salted chicken broth
  • 2 tbsp. l. brown sugar

Preparation:

  1. In a large bowl, combine the ground meat, panko breadcrumbs, eggs, 3/4 cup ketchup, 1 tablespoon Worcestershire sauce, green onions, parsley, thyme, 1 teaspoon salt and a few grinds of pepper; mix with your hands to evenly combine all the ingredients. Form into a 12 x 22 cm loaf.
  2. Transfer the meatloaf to a 6-quart slow cooker. Arrange the potatoes and carrots on top and around the meatloaf. Pour in the chicken broth. Close the slow cooker and cook the meatloaf on low for 8 hours or high for 4 hours.
  3. When the meatloaf is done, skim off any excess fat from the slow cooker liquid. In a small bowl, combine the remaining 1/2 cup ketchup, 1 tablespoon Worcestershire sauce, and brown sugar, then stir in 1/4 cup of the slow cooker liquid. Brush the meatloaf with the sauce. Close the slow cooker and let the meat rest for 10 minutes.
  4. Remove the meatloaf from the slow cooker and cut into pieces. Serve with vegetables and sprinkle with parsley.
