Ingredients:
- 2 bunches of asparagus, 400 g each.
- 1/4 cup breadcrumbs
- 1 clove of garlic
- 1 tbsp. parsley
- 1 teaspoon lemon zest
Preparation:
- In a frying pan with vegetable oil, fry 1/4 cup. breadcrumbs, 1 grated garlic clove and a pinch of salt. Add 1 tbsp. chopped parsley and 1 tsp. lemon zest.
- 2 bunches of trimmed asparagus Toss with olive oil, salt, and pepper. Grill for 5–6 minutes until tender. Sprinkle the cooked asparagus with the breadcrumb mixture.
