Pears in ginger tea syrup with lemon

Ingredients:

  • 4 Barlett or Anjou pears, peeled, cut in half, with the core removed
  • 2 tbsp of water
  • 2 bags of green tea
  • Zest and juice of 2 lemons
  • 5 cm fresh ginger, peeled and sliced
  • 1.5 cups of sugar
  • 3 tablespoons of honey

Preparation:

  1. In a large saucepan, heat water until hot, but do not bring to a boil. Add tea, lemon zest, lemon juice and ginger and keep at a low boil for one minute.
  2. Then add the sugar and honey and bring back to a gentle simmer. Add the pears and cover the surface of the liquid with parchment paper (to ensure the water covers the pears, otherwise they will float) and cook for 5 minutes.
  3. Remove the pan from the heat, but do not remove the pears from the liquid. Cool the pears in the syrup until ready to serve.
  4. Pears can be served separately, with ice cream (or yogurt for breakfast), or the syrup can be reduced to a glaze and served with the pears on cakes.
