Pumpkin tiramisu

Ingredients:

  • 400 gr. pumpkin puree
  • 230 g of cottage cheese, room temperature
  • 3/4 cup brown sugar
  • 1 teaspoon pumpkin pie spice mix
  • 1.5 cups heavy cream
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups of orange tea, brew 2 tea bags and cool
  • 1/2 cup orange juice
  • 3 tbsp rum, optional
  • Chocolate wafer cookies, crumbled
  • Cocoa
  • Powdered sugar
  • 24 ladyfingers, plus 24 broken in half
  • You will need: 22 cm diameter pan with removable bottom

Preparation:

  1. In a medium bowl, combine pumpkin puree, cream cheese, brown sugar and pumpkin pie spicesIn a separate bowl, combine the heavy cream, granulated sugar, and vanilla until medium peaks form. Fold three-quarters of the whipped cream into the pumpkin mixture.
  2. Assemble the tiramisuIn a small bowl, combine the tea with orange juice and rum (optional). Dip the cookies in the tea and quickly arrange them around the edge of the pan. Dip the cookie halves into the tea mixture and arrange them in a single layer on the bottom of the pan. Top with about 1/4 cup of pumpkin.

    Repeat with additional layers of cookies and pumpkin mixture. Top with whipped cream. Repeat with the remaining portions. Refrigerate. When ready to serve, loosen the ring and remove from the pan. Before serving, garnish the tiramisu with chocolate cookies, powdered sugar, and cocoa powder.
