Cheese Meatball Sandwich topcook.tomathouse.com
Ingredients:
Meatballs
- 3 large eggs
- 3/4 tbsp. grated Pecorino Romano or Parmesan cheese
- 1/2 cup finely chopped fresh parsley
- 1 clove of minced garlic
- Salt and ground pepper
- 700 g of ground beef
- 230 g of minced pork
- 230 g of ground veal
- 1/2 cup breadcrumbs
- Olive oil for frying
Ingredients for a sandwich
- 6 ciabatta buns, cut into halves
- 450 g warmed marinara sauce
- 450 g mozzarella cheese, sliced
- 1 tbsp. marinated vegetables jardiniere, without brine and coarsely chopped
- 340 g canned roasted sweet peppers, without brine and cut into strips
Preparation:
- Cooking meatballs: Preheat the oven to broil. In a large bowl, whisk together the eggs, cheese, parsley, garlic, and a little salt and pepper until smooth.
Add the ground meat and breadcrumbs and mix thoroughly again with your hands. Be careful not to overcook the meat, otherwise it will turn into a tough meatloaf. It should be loose and elastic.
- Using your hands, form 6 loose patties, appropriate for the size of your bun. Heat a little oil in a large, heavy-bottomed cast-iron skillet (or use a grill pan) over medium heat. Fry the patties, turning occasionally, until golden brown, about 4 to 5 minutes per side. Place the patties on a baking sheet.
- Making the sandwich: Grill the buns for 3 minutes. Drizzle with 3 tbsp. sauce on top of each bun and place a few slices of mozzarella on top.
Place the buns in the oven and bake until the cheese is melted and the buns are golden brown, about 3 to 5 minutes. Place the patties on the buns and top with the marinated vegetables and roasted bell peppers. Cut the sandwiches in half and serve with the remaining marinara sauce.
