Rice with grilled nectarines topcook.tomathouse.com
Ingredients:
- 3 cups of boiled rice
- Juice of 1/2 lemon
- 2 nectarines, coarsely chopped
- Seasonings to taste (cumin, cinnamon, Cayenne pepper, salt)
- 1/4 cup sliced almonds
- Chopped dill for sprinkling
- Olive oil for grilling, plus a little extra for drizzling
Preparation:
- Toss nectarine with olive oil and generous pinches of cumin, cinnamon, cayenne pepper and a small pinch of salt.
Place on a preheated grill at medium heat. Grill the nectarine slices on each side until charred, 2 to 3 minutes.
Cut the grilled nectarines into smaller pieces and mix with cooked rice. Add lemon juice, a pinch of cumin and cinnamon, and almonds. Stir. Drizzle with olive oil and sprinkle with dill.
