Peanut Noodle Salad

Ingredients:

  • 1 red bell pepper, thinly sliced
  • 250 g dry rice noodles
  • 6 tablespoons lime juice
  • 3 tablespoons soy sauce
  • 3 tbsp. peanut butter
  • 3 tbsp. l. brown sugar
  • 3 tablespoons of vegetable oil
  • 1/2 cup sliced ​​green onions
  • 1/2 cup coarsely chopped fresh basilica
  • 1/2 cup coarsely chopped fresh cilantro
  • 1/2 cup coarsely chopped fresh mint
  • 1/3 cup salted roasted peanuts, coarsely chopped
  • Salt

Preparation:

  1. Place the noodles in a large bowl and pour boiling water over them. Let them steep for about 10 minutes. Drain and rinse the noodles with cold water. Transfer to a salad bowl.
  2. Prepare the salad dressing: In a bowl, whisk together lime juice, soy sauce, peanut butter, brown sugar, and vegetable oil until smooth. Drizzle the dressing over the noodles. Add the bell pepper, green onions, basil, cilantro, and mint, stir, season with salt, and sprinkle with roasted peanuts.
