Ingredients:
Shrimp cutlets
- 450 g medium shrimp, peeled and deveined
- 1/3 cup panko breadcrumbs
- 1 tbsp lemon juice
- 0.5 tsp coarse salt
- 1/4 tsp garlic powder
- 1/4 tsp freshly ground black pepper
- 2 green onions, thinly sliced
- 1 large egg, lightly beaten
- 1/4 cup canola oil
- 4 brioches, cut in half horizontally
- Avocado slices, for assembly
- Lettuce leaves, for assembly
- Tomato slices, for assembly
Mayonnaise sauce
- 0.5 cup mayonnaise
- 1 tsp - 1 tbsp Old Bay seasoning
- Mix in a small bowl
Preparation:
- Shrimp cutlets:
Coarsely chop half the shrimp. Place the remaining shrimp in a food processor and process until smooth. In a large bowl, combine both shrimp mixtures. panko breadcrumbs, lemon juice, salt, garlic powder, pepper, green onions, and egg. Refrigerate for 10 minutes, then form into 4 patties. Refrigerate for another 10 minutes.
- Heat oil in a large cast-iron skillet over medium heat. Fry the patties for about 3 minutes per side.
- Spread mayonnaise on the buns and place a patty on each. Top with avocado slices, lettuce leaves, and tomato slices.
