Tortelloni skewers

Ingredients:

  • 110 g tortellini or tortellini with cheese
  • 1 tbsp red wine vinegar
  • 2 tbsp. l. olive oil
  • 1 clove garlic, crushed
  • 1/4 cup grape tomatoes
  • 1/4 cup medium pitted black olives
  • 1/2 cup bocconcini mozzarella balls, halved or quartered
  • Wooden skewers
  • Marinara sauce or pesto for dipping (optional)

Preparation:

  1. Cook the pasta according to package directions. Drain and rinse under cold water to stop cooking.
  2. Meanwhile, in a medium bowl, combine the vinegar, olive oil, and crushed garlic. Season with salt and pepper to taste and toss with the tomatoes, olives, cheese, and cooked pasta. Thread all ingredients onto skewers in any order. Place the marinara or pesto sauce in an airtight container. Pack in a lunchbox with ice and send to school.

    Note


    For small children, we recommend trimming the pointed end of the skewer with sharp kitchen scissors.
