No-Bake Caramel Date Balls

Ingredients:

  • 1 cup pitted dates (about 150 g)
  • 1/4 cup brown sugar
  • 2 tbsp (30 g) butter
  • 1 cup walnuts
  • 1 teaspoon orange zest
  • 1 tsp vanilla extract
  • A pinch of fine salt
  • 4 whole graham crackers, broken into pieces
  • Colored decorative sugar, for sprinkling

Preparation:

  1. Place the dates, brown sugar, and butter in a microwave-safe bowl and cover. Microwave on full power in 1-minute intervals, stirring occasionally, until the butter is melted.
  2. Transfer the mixture to a food processor and process until smooth. Add walnuts, orange zest, vanilla, salt, and graham crackers and pulse until the mixture forms a firm, slightly sticky ball. Scoop a heaping teaspoon of dough and roll into balls. Refrigerate for about 1 hour, until firm.
  3. Roll the cooled balls in colored sugar. The sticky date balls can be stored in the refrigerator for up to 3 days.
