Ingredients:
- 500 gr. Angel Food biscuit
- 5 cups fresh strawberries, stemmed and sliced, plus a few whole berries for garnish
- 170 g of blueberries
- 170 g of raspberries
- 1/4 cup granulated sugar
- Juice of half an orange
- 4 cups low-fat 2% Greek yogurt
- 1/4 cup honey
Preparation:
- Add the berries to a bowl with sugar and orange juice. Let sit at room temperature for 15-20 minutes to release the juices.
- Meanwhile, place the yogurt and honey in another bowl. Stir with a spoon and smooth out the mixture to make it more pliable.
- Using a serrated knife, cut the sponge cake into large pieces and place about 1/3 of them in the bottom of a medium trifle bowl. Layer the berries in syrup, then add a layer of yogurt, setting aside a few heaping spoonfuls of yogurt for the final layer. Continue alternating layers until all the ingredients are used up. Finally, place a few spoonfuls of yogurt and fresh whole strawberries in the center.
- Cover with plastic wrap and refrigerate until set, at least 1 hour, or overnight.
