Foster with grilled bananas

Ingredients:

  • 4 medium ripe banana
  • 500 ml vanilla ice cream
  • 4 tbsp (60 g) butter
  • 0.5 cup brown sugar
  • 1/4 teaspoon salt
  • 0.5 tsp pumpkin pie spice
  • 1 teaspoon vanilla extract
  • Oil for greasing the grill

Preparation:

  1. Preheat a grill or grill pan to medium heat.

    In a small saucepan over medium heat, melt the butter. Add the brown sugar, salt, and pumpkin pie spicesBring to a boil, stirring until the sugar is completely dissolved. Cook over low heat for about 5 minutes until the mixture thickens. Remove from heat and stir in the vanilla.
  2. Slice each banana lengthwise, leaving the peel on, and coat with the brown sugar cream sauce. Grease a grill pan with oil and place the bananas cut-side down. Grill for about 4 minutes, until caramelized. Flip the bananas over and grill for about 5 more minutes, until the peels are blackened and the bananas are soft and warm inside. Baste frequently with the sauce during cooking.
  3. Remove from grill to a platter and serve with a scoop of ice cream and any remaining sauce.
