Pasta, Asparagus, Corn and Sun-Dried Tomato Salad topcook.tomathouse.com
Ingredients:
- 220 g fusilli pasta (spirals)
- 1 cup chopped blanched asparagus
- 1 cup blanched corn kernels
- 0.5 cup chopped sun-dried tomatoes
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1 tbsp lemon juice
- 1/4 tsp finely grated garlic
- 3/4 tbsp. grated parmesan
Preparation:
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions. Then drain the pasta in a colander and rinse under cold water. Transfer to a bowl.
- Add asparagus, corn and sun-dried tomatoes.
- Prepare the dressingIn a bowl, combine mayonnaise, sour cream, lemon juice, garlic, Parmesan, and salt and pepper to taste. Pour the dressing over the pasta salad and toss to combine. Season with salt and pepper to taste and refrigerate for 3 hours.
