Chicken wings
- 46 chicken wings
- Vegetable oil
- Chipotle hot sauce, recipe below
- Blue cheese and yogurt dip, recipe below
Chipotle hot sauce
- 1.5 cups red wine vinegar
- 3 tablespoons Dijon mustard
- 2-3 tbsp chipotle pepper puree
- 3 tablespoons of honey
- 3 tablespoons of vegetable oil
- 110 g cold butter, cut into pieces
- 2 tablespoons ancho pepper powder
Blue cheese and yogurt dip
- 500 ml thick Greek yogurt
- 3/4 cup crumbled blue cheese
- 2 tbsp finely chopped red onion
- 3 tablespoons thinly sliced green onions
Preparation:
- Preheat the grill to high. Toss the wings in a few tablespoons of vegetable oil and season with salt and pepper. Place them on the grill in a single layer and cook until golden brown on both sides and cooked through (approximately 4-5 minutes per side).
- Chipotle hot sauceIn a medium bowl, whisk together the vinegar, Dijon mustard, chipotle puree, honey, and vegetable oil. Season with salt and pepper to taste.
Melt the butter in a large skillet or saucepan on the grill grate. Add the hot sauce mixture and bring to a boil. Whisk in the ancho chili powder and season with salt to taste. Add the wings and cook, stirring, for 2-3 minutes.
- Serve with blue cheese and yogurt dip.
Blue cheese and yogurt dip Combine all ingredients in a bowl, season with salt and pepper to taste. Cover and refrigerate for at least 30 minutes before serving.
