Classic Quesadilla

Ingredients:

  • 4 (25 cm diameter) wheat tortillas
  • 1 cup finely grated cheese, mature cheddar
  • 4 tbsp (60 g) butter
  • Sour cream, salsa, guacamole for filing

Preparation:

  1. Place the tortilla on a baking sheet and sprinkle a little cheese on one edge, trying to leave some space at the edge. Fold the tortillas in half like a taco to create a crescent shape. Heat a skillet over low heat. Add 1 tbsp (15 g) of butter.

    Place the tortilla in the skillet and cook until golden brown, about 2 minutes. Carefully lift the edge with a silicone spatula to check. Once one side is golden brown, flip the tortilla over and press firmly. Cook until golden brown and the cheese is melted.
  2. Using a spatula, transfer to a separate plate or a large platter. Repeat with the remaining butter and tortillas. Serve with sour cream, salsa, and guacamole on top.
