Sweet Potato Puree with Bacon topcook.tomathouse.com
Ingredients:
- 1400 g sweet potatoes
- 3 slices of bacon, chopped
- 1 tbsp bourbon or apple cider
- 0.5 cups warmed heavy cream
- 6 tablespoons diced butter
- 3 tbsp maple syrup, plus extra for serving
Preparation:
- Preheat oven to 200°C.
Prick the potatoes all over with a fork and place them on a baking sheet. Bake until completely soft, about 45 minutes. Let cool slightly. Cut the potatoes in half, scoop the flesh into a bowl, and set aside. Discard the skins.
- Cook the bacon in a large skillet over medium heat, stirring occasionally, until crisp, 8-9 minutes. Using a slotted spoon, transfer to a plate lined with paper towels.
Add the bourbon or cider to the remaining fat in the pan and cook until almost completely evaporated, about 30 seconds. Add the potatoes, cream, butter, maple syrup, and 1.5 teaspoons of salt; mash with a potato masher until smooth and heated through.
- Divide the mashed potatoes among serving bowls; top with bacon and drizzle with maple syrup before serving.
