Ingredients:
- 4 hot dog sausages
- 4 slices of bacon, chopped
- 100 g thinly sliced brie cheese
- 4 croissants
- 0.33 cups finely diced gherkins and 2 tbsp. brine from the jar
- 1 radish, finely chopped
- 1 finely chopped shallot
- 3 tablespoons champagne vinegar
- 2 tbsp mustard, plus extra for topping
- 0.25 cup olive oil
- Frisee salad as a topping
Preparation:
- Preheat oven to 200°C. Combine the gherkins and brine, radish, shallot, 1 tablespoon vinegar, 1/2 teaspoon salt, and a few grinds of pepper in a medium bowl; set aside. Whisk the remaining 2 tablespoons vinegar and mustard in a separate bowl. Slowly whisk in the olive oil, season with salt and pepper, and set aside.
- Wrap each sausage in a spiral with a piece of bacon. Heat a large skillet over medium heat. Add the sausages and cook, turning occasionally, until the bacon is crispy, 10-15 minutes.
- Cut the croissants apart, keeping the two halves connected. Place them open-side up and top with cheese. Bake until the cheese is melted, about 5 minutes.
Place a sausage in each croissant; top with a dollop of frisee salad and gherkin vinaigrette, then drizzle generously with the oil, vinegar, and mustard sauce. Serve with mustard.
