Hawaiian Tuna Wraps

Ingredients:

    Salad dressing

  • 1/2 cup peanut butter with pieces
  • 1/2 cup coconut milk
  • 1 tbsp soy sauce, plus extra for serving
  • 2 tsp fresh lime juice
  • 2 tsp hot pepper sauce
  • 1 teaspoon sesame oil, plus a little more

    Fish salad

  • 450 g of large-diced ahi tuna for sushi
  • 2 tomatoes, diced
  • 200 g chopped smoked salmon (optional)
  • 1/4 cup chopped red onion
  • 3/4 cup washed and chopped ogo seaweed (optional)
  • 5 tsp chopped toasted macadamia nuts
  • 3 tablespoons chopped fresh cilantro leaves
  • Juice of 1 lime
  • Sea salt
  • Deep-fried wontons for serving
  • Head lettuce leaves for serving

Preparation:

  1. In a food processor, combine the peanut butter, coconut milk, soy sauce, lime juice, hot sauce, and sesame oil. Blend on high speed.
  2. Place the tuna in a large bowl. Add the tomatoes, smoked salmon, red onion, seaweed, macadamia nuts, cilantro, and lime juice.
  3. Drizzle the peanut butter mixture over the tuna and toss to coat. Season with sesame oil, soy sauce, and salt to taste. Serve on wontons or wrapped in lettuce leaves.
