Chinese Green Onion Quesadillas topcook.tomathouse.com
Ingredients:
- 4 large tortillas from wheat flour
- 1 tablespoon white wine vinegar or apple cider vinegar (to taste)
- 1 tsp. sesame oil
- 1/4 cup dark tamari soy sauce
- 1/8 cup water (by eye)
- 1 tbsp light oil, plus a little more
- 4 green onions, cut into 2.5 cm lengths
- 2 beaten eggs and 2 egg yolks, salt
- Salt
- 2 tablespoons of honey
Preparation:
- Mix honey with wine vinegar, sesame oil and tamari, then add water and transfer to a small ceramic serving bowl.
- In a large nonstick skillet, heat a tablespoon of oil over high heat.
When it begins to smoke, add the green onions and wilt for 2 minutes until the edges are crisp and the greens are charred. Remove the pan from the heat and stir in the salted egg mixture.
Stir and fry the eggs, briefly returning the pan to the heat if necessary, then transfer them to a plate. Wipe the pan clean and drizzle oil over it and the flatbreads.
- Fry the tortilla for 30 seconds, flip it over, and top with 1/4 of the green onions and eggs. Roll the tortillas into triangles, fry until crispy on the outside, and remove from the pan. Repeat with the remaining ingredients and serve with honey dipping sauce.
