Stir-fry with chicken, peppers, and broccolini topcook.tomathouse.com
Ingredients:
- 450 g chicken breast fillet, cut into cubes
- 2 bunches broccolini, chopped
- 4-5 small sweet peppers, cut into thin rings
- 1-2 red jalapeno peppers, seeded and sliced into thin rings
- 1 tbsp. egg white
- 1 tbsp sake or dry sherry
- 3 tbsp. corn or potato starch
- 1/4 cup oyster sauce
- 2 tbsp. l. olive oil
- 3 cloves garlic, chopped
- 1 tbsp. chopped peeled ginger
- 1 bunch of green onions, cut into rings
- 1/4 cup sliced almonds or chopped cashews
Preparation:
- In a medium bowl, combine the egg white, sake, and 1 tablespoon of cornstarch. Add the chicken and stir. In another bowl, combine 2 tablespoons of cornstarch, oyster sauce, and 1/2 cup of water.
- Cook broccolini in boiling water for 1-2 minutes, drain and rinse under cold water.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chicken and cook, stirring, for about 4 minutes. Transfer to a serving platter.
Increase the heat and add 1 tablespoon of olive oil. Add the garlic and ginger and cook over high heat, stirring constantly, for 30 seconds. Add the green onions and peppers and cook for another minute. Add the chicken, broccolini, and nuts and cook for another 2 minutes.
- Reduce heat to medium and add in stir-fry oyster sauce mixture. Cook, stirring, until thickened, about 3 minutes.
