Pork tenderloin with apple sauce topcook.tomathouse.com
Ingredients:
- 2 pieces (450 g) pork tenderloin, cut in half across the grain
- Vegetable oil
- Salt and freshly ground black pepper
- 1.5 cups of natural apple juice (direct pressing)
- 1/2 cup apple cider vinegar
- 1/4 cup maple syrup
Preparation:
- Preheat oven to 260°C and position a rack in the upper third.
Pat the tenderloin dry with paper towels, brush with oil, and season generously with salt and pepper. Heat a large skillet over medium-high heat.
Add 2 pieces of pork tenderloin and fry, turning, on all sides until golden brown, about 4 minutes. Transfer the pork to a baking sheet and fry the remaining pieces.
- Place the pork in the oven and bake for about 15 minutes, until the temperature reaches 140-150°F (60-65°C) when inserted into the center of the meat.
While the meat is roasting, place the skillet over high heat, add the apple juice and vinegar, and scrape up any remaining bits. Cook until the mixture has reduced by 2/3, about 8 minutes. Reduce the heat to medium, add the maple syrup, and remove from the heat.
- When the pork is done, transfer it to a cutting board and let it rest for 5 minutes. Heat the sauce over medium-high heat, add the pork, add the juices, and pour the sauce over the meat. When the pork is warm, return it to the cutting board and slice thinly. Serve with more sauce poured over the pork.
