Brooklyn-Style Corn Dogs

Ingredients:

  • 3 strips of bacon, coarsely chopped
  • 2 large onions, finely chopped
  • 1 teaspoon coarse salt
  • 2 tbsp. l. canola oil
  • Corn kernels from 3 ears of corn
  • 0.5 tsp sugar
  • Freshly ground black pepper
  • 1 tbsp finely chopped fresh coriander leaves
  • 4 sausages
  • 1 tbsp piri-piri hot pepper sauce
  • 4 potato buns
  • 4 tablespoons melted unsalted butter
  • 2 tablespoons mayonnaise
  • 2 tablespoons whole grain mustard
  • 0.25 tbsp. grated hard cotija cheese
  • A pinch of cayenne pepper
  • 0.5 lime, cut into 4 pieces

Preparation:

  1. Bacon


    Add the bacon to the pan and fry over medium heat until the fat has rendered and the bacon is crispy. Set the bacon aside for now. Use the rendered fat to fry the onions.
  2. Caramelized onions


    Place the onions in a frying pan with the rendered bacon fat and add 0.5 teaspoon of salt to reduce the moisture content of the fat. Let it cook over medium heat for 20 minutes. Set aside.
  3. Corn


    Heat 2 tablespoons of canola oil in a skillet over medium heat. When the oil begins to smoke slightly, add the corn kernels, 0.5 teaspoon of sugar, 0.5 teaspoon of table salt, and freshly ground pepper to taste. Stirring occasionally, cook the mixture over high heat until the corn kernels are tender and browned. Remove from heat and stir in 1 teaspoon of chopped cilantro leaves. Set aside.
  4. Sausages


    Preheat the grill to high. Place the hot dogs on the grill grates and grill until lightly charred. Brush them lightly with hot sauce. Brush the insides of the hot dog buns with melted butter and place them cut-side down on the grill. Cook for 30 seconds, or until crispy.
  5. Assemble hot dogs from prepared ingredients


    Spread mayonnaise and mustard on the inside of each hot dog bun. Place a hot dog in each bun and top with 1 tablespoon of caramelized onions. Add 1 tablespoon of chopped bacon and 2 tablespoons of the corn mixture. Sprinkle each hot dog with grated Cotija cheese. 1/2 tablespoon of cheese is enough for each hot dog. Add a pinch of cayenne pepper. Squeeze a little lime juice over the top. Serve.
