Ingredients:
Artichokes
- 2 x 400g jars of canned artichoke hearts, drained
- 0.5 cups flour
- 2 large eggs
- 1 cup panko breadcrumbs
- 1 tsp. grated lemon zest
- 1 teaspoon dried oregano
- 0.5 tsp coarse salt
- Olive oil cooking spray
Dip sauce
- 1/4 cup mayonnaise
- 1 small clove of garlic, grated
- 2 tsp freshly squeezed lemon juice
- 2 tsp extra-virgin olive oil
- 1/4 teaspoon coarse salt
Preparation:
- Artichokes:
Preheat the air fryer to 180°C. Pat the artichoke hearts dry. Cut them in half lengthwise. Place the flour in a shallow bowl and lightly beat the eggs in another bowl. In a third bowl, combine the panko, lemon zest, oregano, and coarse salt. Dredge the artichokes in the flour, then dip them in the egg and then roll them in breadcrumbs.
- Lightly spray the artichokes with cooking spray and place them in an even layer, sprayed side down, in the air fryer basket. Cook for 7 minutes. Spray with cooking spray, flip, and cook until golden brown, another 7 minutes.
- Dip sauce:
In a small bowl, combine mayonnaise, garlic, lemon juice, olive oil, and salt. Serve with artichokes.
