Sweet and Spicy Meatloaf

Ingredients:

  • 2 tbsp. l. olive oil
  • 2 green bell peppers, finely diced
  • 2 red bell peppers, finely diced
  • 1 large yellow onion, finely diced
  • 3/4 cup panko breadcrumbs
  • 0.5 cups whole milk
  • 2 heads of garlic, roasted, mashed to a paste
  • 1 cup ketchup
  • 1/4 cup steak sauce
  • 1/4 cup Sriracha sauce
  • 1/4 tbsp. maple syrup
  • 1 tablespoon Montreal steak seasoning
  • 900 g of ground beef with 20% fat content
  • 450 g raw sweet Italian sausage, casings removed
  • 3 eggs, beaten
  • 1 bunch fresh Italian parsley, finely chopped

Preparation:

  1. Heat olive oil in a large skillet over medium-high heat. Saute the green pepper, red pepper, and onion until very soft and golden brown, 10-12 minutes. Transfer to a plate or baking sheet and refrigerate until completely cool. This can be made up to a day ahead.
  2. Preheat oven to 175°C.
  3. In a bowl, combine the breadcrumbs, milk, and roasted garlic until the consistency resembles oatmeal. Set aside. In another bowl, combine the ketchup, steak sauce, Sriracha, maple syrup, and steak seasoning. If the sauce is too spicy, add a little more ketchup to tone down the flavor. Set aside.
  4. In a bowl, combine the ground beef, sausage, parsley, eggs, pepper and onion mixture, and two-thirds of the meatloaf sauce. Mix well, but do not compact the ground beef. Take a small ball of the meat mixture and form it into a small patty. Fry it in a frying pan until done and taste. Season the meat mixture with salt and pepper if needed.
  5. If you like the taste, spoon the meat mixture into a greased baking dish or form it into a log and place it on a parchment-lined baking sheet. Bake until the internal temperature of the meatloaf reaches 150°F (68°C), 1 to 1.5 hours. Remove the meatloaf from the oven.
  6. Turn the oven to broil. Brush the meatloaf with half of the remaining sauce, then return to the oven and broil for 2-3 minutes. Let rest for 20 minutes before slicing. Serve with mashed potatoes and drizzle with the remaining sauce.

    Sandwiches:
    Leftover meatloaf makes a delicious sandwich! Toast the slices and arrange them on bread with cheese and a little sweet and spicy sauce.
