Ingredients:
- 2 tbsp (30 g) butter
- 2 tablespoons of wheat flour
- 1/2 tsp coarse salt
- A few pinches of pepper
- 1 cup of milk
- 3/4 tbsp. grated semi-hard cheese
- 1/4 cup canned green chili peppers (drained)
- 1 plum tomato, diced
- 1 – 2 tablespoons chipotle hot sauce made with smoked jalapeño peppers
Preparation:
- In a saucepan, combine 2 tablespoons (30 g) of butter and flour, 1/2 teaspoon of coarse salt, and a few grinds of pepper. Place over medium heat and stir for 2 minutes, until the mixture begins to foam. Gradually add 1 cup of milk. Cook, stirring, for about 4 minutes, until thickened.
- Add 3/4 cup grated semi-hard cheese, 1/4 cup canned green chilies (drained), 1 plum-shaped diced tomato and 1–2 tablespoons of chipotle hot sauce made with smoked jalapeños. Stir until smooth.
