Ingredients:
- 1.3 kg ground turkey
- 1/4 cup olive oil
- 1 large onion, chopped
- 2 teaspoons fresh thyme leaves
- 1 teaspoon chopped fresh sage
- 2 cloves garlic, grated
- 1 tbsp tomato paste
- 3 tablespoons Worcestershire sauce
- 3/4 cup panko breadcrumbs
- 0.5 cup chicken broth
- 2 large eggs
- 0.5 cups ketchup
Preparation:
- Preheat oven to 220°C, line a baking sheet with foil.
- In a large skillet, heat the olive oil over medium heat. Add the onion, thyme, sage, 1 teaspoon salt, and 1/2 teaspoon black pepper. Cook, stirring frequently, until the onion is softened, about 10 minutes. Add the garlic and cook for 1 minute. Add the tomato paste and cook for 1 minute, stirring to incorporate. Stir in the Worcestershire sauce. Remove from heat and let cool.
- Pour in panko breadcrumbs Place the turkey breasts in a large bowl and pour in enough chicken broth to absorb the liquid. Add the ground turkey, eggs, 2 teaspoons of salt, 1/2 teaspoon of black pepper, and the cooled onion mixture. Mix well with your hands to distribute the ingredients evenly. On a foil-lined baking sheet, form the meat mixture into a 25x12 cm loaf. Brush the top and sides with ketchup.
- Place the meatloaf in the oven and reduce the oven temperature to 350°F (175°C). Bake until a thermometer inserted into the center of the loaf registers 165°F (74°C), 45 minutes to 1 hour. Let cool slightly, slice, and serve.
