Chili Lime Flavored Snack Mix

Ingredients:

  • 4 cups crispy corn squares (breakfast cereal)
  • 3 cups salted roasted peanuts
  • 2 cups mini pretzels
  • 2 tbsp. chipotle and cheddar crackers
  • 2 cups broken lime-flavored tortilla chips
  • 2 cups coconut flakes
  • 1 cup baked corn kernels (about 110 g)
  • 1 cup roasted salted pumpkin seeds
  • 165 g unsalted butter
  • 2 tablespoons tightly packed lime zest (about 6 limes)
  • 1 tbsp Mexican sazon seasoning
  • 2 teaspoons coarse salt
  • 0.5 tsp chili powder
  • 1 tbsp. grated parmesan

Preparation:

  1. Preheat oven to 150°C, line 2 baking sheets with parchment paper.
  2. In a large bowl, combine cornflakes, peanuts, pretzels, chipotle cheddar crackers, tortilla chips, coconut, corn kernels, and pumpkin seeds.
  3. In a small saucepan, melt the butter. Add the lime zest, seasoning, coarse salt, and chili powderCook over low heat until the flavors are combined, about 1 minute. Remove from heat and stir in the Parmesan.
  4. Pour half of the mixture over the snack mixture and stir to coat evenly. Then add the other half of the spice mixture and stir again.
  5. Place on two prepared baking sheets and bake until lightly browned and the Parmesan is melted, about 15 minutes. Serve immediately or store in an airtight container.
