topcook.tomathouse.com

Ingredients:

  • 1 French baguette or Italian bread, 60 cm long.
  • 1/4 cup extra-virgin olive oil
  • 2 cloves garlic, grated
  • 0.5 tsp dried oregano
  • 170 g smoked sausage, thinly sliced
  • 1 small onion, thinly sliced
  • 1 green or red bell pepper, thinly sliced
  • 0.5 tbsp. barbecue sauce
  • 2 cups grated Monterey Jack cheese (about 220 g)
  • 1 cup grated smoked cheddar (about 110 g)
  • Chopped fresh cilantro, for sprinkling

Preparation:

  1. Preheat oven to 260°C. Line a rimmed baking sheet with foil. Trim the ends of the baguette, then cut it into 4 equal pieces; halve each piece on the side. Place the bread cut-side up on the prepared baking sheet.
  2. Combine 3 tablespoons of olive oil with garlic and oregano. Brush the bread slices with the oil and season with salt and pepper. Bake until golden brown, 4-5 minutes. Let cool slightly.
  3. In a large skillet, heat the remaining 1 tablespoon olive oil over medium-high heat. Add the sausage and cook, stirring occasionally, for about 5 minutes. Transfer to a plate with a slotted spoon. Add the onion and bell pepper to the skillet and season with salt and pepper.
  4. Cook, stirring occasionally, until the vegetables are tender and crispy around the edges, about 5 minutes. Add 1/4 cup barbecue sauce and cook until the vegetables are glazed, about 2 minutes.
  5. In a medium bowl, combine Monterey Jack and Cheddar cheeses. Sprinkle each slice of bread with about 1/4 cup of the cheese mixture, then top with the onion-pepper mixture, sausage, and remaining cheese. Bake until the cheese is melted and bubbly, about 8 minutes.
  6. Microwave the remaining 1/4 cup barbecue sauce for about 30 seconds. Drizzle the sauce over the pizza and sprinkle with cilantro.
