Beer-battered fish and cheese fries topcook.tomathouse.com
Ingredients:
- 2 packages of 350 g. frozen cod in beer batter
- 1 package (800 g) of frozen French fries
- 2 tablespoons unsalted butter
- 2 tbsp. premium flour
- 1.5 tsp smoked paprika
- 1.5 tsp mustard powder
- 3/4 cup beer
- 0.5 cups low-fat cream (10%)
- A little hot sauce
- 2 cups grated cheddar
- 3 tbsp. l. chopped chives
- Lemon wedges, for serving
- Malt vinegar, for serving
Preparation:
- Position oven racks in the upper and lower thirds of the oven and preheat to 425°F (220°C). Place the cod in a single layer on a baking sheet. Place the fries in a single layer on another baking sheet. Bake, tossing the fries and rotating the baking sheets halfway through, until the cod and fries are golden and crispy, about 16 minutes.
- Meanwhile, melt the butter in a medium saucepan over medium heat. Stir in the flour, smoked paprika, mustard powder, and 1/2 teaspoon salt. Add the beer, cream, and hot sauce and bring to a simmer; simmer until the sauce thickens slightly, about 5 minutes. Remove from heat and stir in the cheddar until completely melted.
- Divide the cod and fries among 4 plates. Top the fries with half the cheese sauce and chives. Serve with lemon wedges, malt vinegar, and the remaining sauce.
