Melt-a-dish ice cream sundae with homemade chocolate chip muffin

Ingredients:

  • 220 g softened butter
  • 1 cup firmly packed brown sugar
  • 0.5 cup granulated sugar
  • 1 tbsp vanilla extract
  • 2 eggs
  • 2 cups premium flour
  • 2 heaping teaspoons of instant coffee
  • 1.5 tsp of baking soda
  • 1 teaspoon of salt
  • 1 tbsp. milk chocolate granules
  • 1 tbsp. semi-sweet chocolate granules
  • Ice cream, such as vanilla, strawberry, mint chocolate chip, or chocolate, for serving
  • Hot caramel, for serving
  • Whipped cream, for serving
  • Maraschino cherries, for serving

Preparation:

  1. Preheat oven to 175°C.
  2. In a large bowl, combine the butter, brown sugar, and granulated sugar. Add the vanilla extract and eggs and mix thoroughly. In a separate bowl, combine the flour, instant coffee, baking soda, and salt. Add the flour mixture to the liquid mixture in 3 additions, mixing after each addition. Add the milk and semisweet chocolate chips.
  3. Place the batter in a 25cm diameter pan and bake until golden brown, 30-40 minutes. Remove the pan from the oven, top with a few scoops of your favorite ice cream, and drizzle with hot caramel, garnish with whipped cream and cherries.
