Fried chicken in a frying pan

Ingredients:

  • 6 boneless, skinless chicken breasts
  • Cooking spray or vegetable oil
  • 1 tbsp. salt
  • 0.5 tbsp. l. ground cumin
  • 1 tbsp lemon pepper
  • 1 tbsp garlic powder
  • 1 tbsp onion powder or flakes
  • 1 tbsp. l. dried oregano
  • 1 tbsp. l. dried parsley
  • 1 tbsp ground annatto seeds
    (Annatto seeds are extracted from the fruits of the Brazilian annatto tree and are used to color oils, sausages, cheeses, and creams red-orange in the cuisine of the Caribbean, Brazil, Latin America, and Filipino cuisine)

Preparation:

  1. Combine all seasoning ingredients in a small glass jar with a lid and shake to combine. Store in a cool, dry place for up to 2 weeks.
  2. Rub the chicken with adobo seasoning. Heat a grill pan over medium heat and spray with cooking spray or vegetable oil. Place the chicken in the grill pan and cook for 3-5 minutes per side, depending on the size of the chicken breasts.

    Adobo seasoning is suitable for many Latin American recipes. You can make a large batch, store it in an airtight container, and use it in your favorite dishes.
  3. When the chicken is done, slice 2 breasts for quesadillas and set aside the remaining 4 breasts for chicken salad (recipe - Grilled Chicken Salad).
