Caprese tartlets topcook.tomathouse.com
Ingredients:
- 8 slices of white bread
- 1/4 cup extra-virgin olive oil
- 3 tbsp cream cheese, softened
- 1 teaspoon garlic powder
- 1 teaspoon dried basil
- 2 plum tomatoes, thinly sliced
- 110 g fresh mozzarella (a ball about 5 cm in size), thinly sliced
- Balsamic vinegar to drizzle
- 8 fresh basil leaves
- Special equipment: metal muffin pan
Preparation:
- Preheat oven to 190°C.
- Trim the crusts from the bread and, using a large spoon or rolling pin, gently flatten the slices until they are thin. Brush both sides of the bread with olive oil. Press them into the cavities of a muffin tin to form tartlets. Set aside.
- In a small bowl, mix together the cream cheese, garlic powder, dried basil, salt, and black pepper with a fork until smooth. Spoon about 1 teaspoon of the cheese mixture into the bottom of each muffin cup. Bake the tartlets until golden brown, 12-13 minutes.
- Meanwhile, generously salt the tomato slices. Once the tartlets are golden brown, remove them from the oven and transfer them to a wire rack. Place a slice of mozzarella on top of the cream cheese, then 1-2 slices of tomato. Season with salt and pepper to taste and drizzle with olive oil. balsamic sauce; sprinkle with thinly sliced basil.
