Creamed Spinach Casserole topcook.tomathouse.com
Ingredients:
- 2 x 280g packages frozen chopped spinach, thawed and squeezed out
- 3 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 1 and 1/4 cups heavy cream
- 1/4 teaspoon freshly grated nutmeg
- 1/8 tsp cayenne pepper
- 0.5 tbsp. grated parmesan
- 60 g of cream cheese
- 2 tablespoons panko breadcrumbs
Preparation:
- Preheat oven to 200°C.
- In a medium saucepan, melt the butter over medium heat. Add the garlic and onion and cook, stirring occasionally, until softened, about 6 minutes. Add the heavy cream, nutmeg, and cayenne pepper and bring to a simmer. Simmer, stirring occasionally, until the sauce thickens slightly, about 5 minutes.
- Stir in the spinach, 1/2 teaspoon salt, and 1/4 cup Parmesan. Add the cream cheese and stir until completely melted. Season with salt and pepper to taste.
- Transfer the mixture into a 1.5-2 liter baking dish and sprinkle with breadcrumbs and the remaining 1/4 cup Parmesan. Bake until golden brown, about 15 minutes.
