Tortellini and spinach soup topcook.tomathouse.com
Ingredients:
- 6 cups lightly salted chicken broth
- 1 package (250 g) tortellini pasta with cheese
- 1 package (250g) frozen chopped spinach, thawed and squeezed out
- 1 - 2 tsp chopped garlic
- 1 can (400 g) of canned Italian stewed tomatoes
- Dried basil, to taste
- Grated Parmesan, for serving
Preparation:
- In a large saucepan, bring the broth to a boil over medium heat. Add the tortellini and simmer for 3 minutes.
- Add spinach, garlic, tomatoes, and dried basil. Season with salt and pepper to taste. Bring to a boil again and simmer for another 2-3 minutes. Serve hot with grated Parmesan cheese.
