Perfect French Fries

Ingredients:

  • 1200 gr. potatoes with brown skin
  • Vegetable oil, for frying
  • Sea salt
  • Mixed ketchup and mayonnaise, for serving

Preparation:

  1. Peel and rinse the potatoes, cut into 12 mm thick strips.

    Cover the potatoes with cold water and leave to soak for 2-3 hours at room temperature. Drain and pat dry.
  2. Pour 5 cm of vegetable oil into a saucepan with a thick bottom and heat to 150°C.

    Deep-fry the potatoes, dropping them in small batches into the hot oil, for 4-5 minutes, until soft. Transfer each batch to dry paper towels.
  3. Once all the potatoes are fried, increase the temperature and heat the oil to 200°C.

    Place the potatoes back in the oil and continue frying until golden brown and crispy, transferring to new paper towels.

    Sprinkle fries with sea salt and serve with a mixture of mayonnaise and ketchup.
