Grilled salmon with Asian barbecue sauce topcook.tomathouse.com
Ingredients:
- 2 tbsp canola oil + extra for brushing the fish
- 2 shallots, chopped
- 2 cloves garlic, chopped
- 1/4 cup hoisin sauce
- 1/4 cup ketchup
- 2 tablespoons of honey
- 1 tbsp sambal-olek paste
- 2 tablespoons toasted sesame seeds
- 1 teaspoon soy sauce
- 1 teaspoon fish sauce
- 1 tbsp. l. rice vinegar
- 4 salmon steaks (220 g each)
- Coriander leaves, for serving
Preparation:
- Heat vegetable oil in a small saucepan over medium heat. Add shallots and garlic and cook until soft. Stir in hoisin sauce, ketchup, honey, sambal oelek, sesame seeds, soy sauce, and fish sauce and cook for 5 minutes. Remove from heat, stir in vinegar, and season with salt and pepper to taste.
- Preheat the grill to high. Brush the salmon steaks with oil on both sides, season with salt and pepper to taste. Grill until golden brown and charred on both sides. Then cook until medium, basting with the sauce about every minute. Remove the fish from the grill and transfer to a plate. Brush with additional sauce. Transfer the fish to a serving platter and let rest for 5 minutes. Sprinkle with cilantro and serve.
