Layered buns for every day

Ingredients:

  • 2.5 cups flour + extra for work
  • 2 tbsp. baking powder
  • 1 tbsp. sugar
  • 1.5 tsp coarse salt
  • 165 g butter, cut into small pieces and frozen
  • 1 cup of sour milk or kefir + extra for greasing the scones

Preparation:

  1. Preheat oven to 220°C. In a food processor, combine flour, baking powder, sugar, and salt.
  2. Add the butter and pulse until the butter forms pea-sized pieces. Add the sour milk and pulse a couple more times until the dough comes together but is still coarse.
  3. Turn the dough out onto a floured surface and shape it into a thick 20x20 cm square. Cut into 16 5 cm squares. Place the buns on a dry baking sheet, brush with sour milk, and bake until golden brown, 12-15 minutes.
