Egg noodles baked with ham and three cheeses topcook.tomathouse.com
Ingredients:
- 350 g wide egg noodles
- 2 cups heavy cream
- 2.5 cups whole milk
- 2 teaspoons flour
- 0.5 tsp salt + extra for cooking noodles
- 1/4 tsp ground black pepper
- 2 cups grated fontina cheese
- 3/4 cup finely grated Parmesan
- 3/4 tbsp. grated mozzarella
- 110 g cooked ham, diced (optional)
- 2 tbsp finely chopped fresh Italian parsley leaves
Preparation:
- Preheat oven to 230°C.
- Grease a 22x32cm glass baking dish with butter. Cook the noodles in a large pot of boiling salted water until al dente, stirring frequently, for 5 minutes. Drain, but do not rinse.
- In a large bowl, whisk together the cream, milk, flour, 1/2 teaspoon salt, and black pepper. Stir in 1 cup fontina, 1/2 cup Parmesan, 1/2 cup mozzarella, prosciutto, if using, and parsley. Add the noodles and toss to coat. Transfer the mixture to the prepared baking dish.
- In a small bowl, combine the remaining 1 cup fontina, 1/4 cup Parmesan, and 1/4 cup mozzarella. Sprinkle the cheese mixture over the noodles.
- Bake until the sauce is simmering and the cheese is melted and browned on top, about 20 minutes. Let rest for 10 minutes before serving.
