Mediterranean Spinach Meatballs

Ingredients:

  • 450 g of ground turkey, 20% fat
  • 2 cups frozen spinach (300 g)
  • 1/4 cup breadcrumbs
  • 2 tsp ground cumin
  • 2 cloves garlic, crushed
  • 1 medium carrot, grated
  • 1 large egg
  • 2 tbsp fresh dill, chopped
  • 1 cup full-fat Greek yogurt
  • Juice of half a lemon
  • 3 pocketed pitas, cut in half and warmed
  • 2 tbsp. shredded romaine lettuce
  • 2 plum tomatoes, chopped

Preparation:

  1. Preheat oven to 230°C. Line a baking sheet with parchment paper and spray with cooking spray.
  2. In a large bowl, microwave the spinach according to package directions. Let cool slightly.
  3. Add ground turkey, breadcrumbs, cumin, garlic, carrots, egg, 1 tablespoon of dill, 0.5 teaspoon of salt, and a pinch of black pepper to the spinach. Mix everything together with your hands. Drop mounds of the meat mixture (about 2 tablespoons each) onto the prepared baking sheet.
  4. Using damp hands, form the balls and spread them evenly on the baking sheet. Bake until set, 12-14 minutes.
  5. Meanwhile, in a small bowl, combine the yogurt, lemon juice, and remaining dill. Season with salt and pepper to taste.
  6. Serve 3 meatballs in each pita pocket. Top with shredded lettuce and sliced ​​tomatoes. Drizzle with yogurt sauce.
