Chicken gravy

Ingredients:

  • 1.5 cups lard, vegetable oil, bacon fat, or a mixture of these
  • 2 cups of flour
  • 10 cups (2.4 l) chicken or beef broth
  • 2 cups chopped green onions
  • 1.5 tsp salt
  • 2 tsp black pepper
  • 1 tsp onion powder
  • 0.5 tsp cayenne pepper

Preparation:

  1. Place a large skillet over medium heat and melt the fat for 2 minutes.
  2. Add flour, stirring the fat constantly.
  3. Once the fat and flour are combined, reduce the heat to medium and cook for 10 minutes, stirring frequently.
  4. Add the remaining ingredients and, still stirring frequently, bring to a boil.
  5. Reduce heat and simmer, stirring constantly, for 20 minutes.
