Green beans fried with bacon topcook.tomathouse.com
Ingredients:
- 450 g green and/or yellow wax beans, trimmed and cut into 1 cm pieces.
- 4 strips lean bacon, finely chopped
- 2 tbsp chopped chives
- 1 lemon
Preparation:
- In a large nonstick skillet over medium-high heat, cook the bacon, stirring, until browned and the fat has rendered, about 4 minutes. Add the green beans and 1/4 teaspoon each of salt and pepper and cook, stirring, until the beans are bright green. Add 2 tablespoons of water and continue cooking, stirring occasionally, until the beans are crisp-tender, about 6 minutes.
- Transfer the beans to a serving platter and stir in the chives. Grate the lemon zest directly over the beans, and season with salt and pepper to taste.
