Ingredients:
- 0.9-1 kg of young potatoes in their skins from your garden
- 1/4 cup sour cream
- 2 cups grated cheddar
- 3 tbsp chopped chives from the garden
Preparation:
- Cut the potatoes in half and place them in a saucepan. Cover with water and bring to a boil. While you wait for the water to boil, prepare other dishes.
- When the water comes to a boil, add 2 large pinches of salt and cook for 10 minutes or until tender. Drain, leaving the potatoes in the hot pan. Mash the potatoes with a potato masher and stir in the sour cream and cheddar. When the cheese has melted into the potatoes, add the chives, salt, and pepper, and mash again. Taste the potatoes and add more salt if needed.
