Millionaire's Ham

Ingredients:

  • 1 piece of cooked ham on the bone weighing 3.5-4.5 kg.
  • 3.5 cups brown sugar
  • 1 and 3/4 cups orange juice
  • 1 teaspoon cayenne pepper

Preparation:

  1. Preheat oven to 350°F (175°C). Line the bottom and rack of a roasting pan with foil. Place the rack inside the roasting pan.
  2. Place the ham fat-side down and use a sharp knife to make diagonal cuts 1 inch (2.5 cm) deep and 0.75 inches (2.5 cm) long across the entire surface. Then, in the opposite direction, make diagonal cuts 1 inch (2.5 cm) deep and 0.75 inches (2.5 cm) long to create a grid pattern. Turn the ham over so the fat side is facing up. Use a knife to make the same pattern, reinserting any loose pieces of meat. Place the ham fat-side up on the rack and roast, rotating the roasting pan halfway through, until the center of the ham is heated through and the fat begins to brown, about 2 hours.
  3. Meanwhile, in a medium bowl, combine 3 cups sugar, 3/4 cup orange juice, 1/2 teaspoon cayenne pepper, 1 tablespoon salt, and 1 teaspoon pepper. Remove the ham from the oven and carefully spread one-third of the glaze over the entire surface. Bake for another 20 minutes. Brush with another third of the glaze and bake for another 20 minutes. Spread the remaining third of the glaze over the ham and bake until the glaze is shiny and the skin is golden brown and crisp, about 30 minutes more.
  4. In a small saucepan, combine the remaining 1/2 cup sugar, 1 cup orange juice, 1/2 teaspoon cayenne pepper, and a generous amount of ground black pepper and bring to a boil over medium heat. Cook, stirring frequently, until the sugar dissolves and the sauce has reduced by about half, 7-8 minutes. Remove the ham from the oven and let it rest for 15 minutes. Transfer to a cutting board. Slice and serve with the sauce.
