Pork ribs baked in sweet and spicy sauce

Ingredients:

  • 1.3 kg pork ribs
  • Juice of 1 lemon
  • Coarse salt and freshly ground pepper
  • 1/2 cup dark beer
  • 4 tbsp (60 g) butter
  • 8 cloves garlic, thinly sliced
  • 1 tbsp ground chipotle pepper
  • 1 cup sweet and hot chili sauce
  • 2 tablespoons light brown sugar
  • 1/3 tbsp. rice vinegar

Preparation:

  1. Preheat oven to 160°C (325°F). Trim sinew and membrane from the ribs. Drizzle the pork ribs with lemon juice, season with 1 teaspoon salt and 1/2 teaspoon pepper. Place the ribs, meat side up, in a baking dish and pour beer over them. Cover tightly with foil, place in the oven, and simmer until the meat begins to fall off the bones, about 1 hour.
  2. Meanwhile, prepare the sauce: Melt the butter in a saucepan, add the garlic and cook, stirring, until light golden brown, about 2 minutes. Add the ground pepper and continue cooking for another minute. Stir in the chili sauce, brown sugar, vinegar, and 1 cup of water and bring to a boil. Reduce the heat and simmer, stirring occasionally, until the sauce thickens and reduces by half, about 40 minutes.
  3. Remove the pan from the oven; increase the temperature to 200°C. Remove the foil and carefully drain the liquid. Add 1/4 cup of liquid to the sauce and stir. Pour the sauce over the ribs, return to the oven, and continue baking, uncovered, until golden brown, about 35 minutes.
  4. Place the ribs on a cutting board and cut into pieces. Return the ribs to the pan and toss with the sauce.
