Grilled Stuffed Jalapeños topcook.tomathouse.com
Ingredients:
- 8 fresh whole jalapeños
- 1 tbsp. coarsely grated mozzarella
- 1 teaspoon chopped oregano
- 8 slices smoked bacon
Preparation:
- Preheat a gas or charcoal grill, or a grill pan on the stovetop over high heat.
- Grill the jalapeños on all sides until golden brown or blistered and tender, 3 to 5 minutes. Remove from heat and let cool.
- Meanwhile, in a small bowl, combine the cheese and oregano. Season with salt and pepper.
- To remove the seeds from the peppers, cut off the stems and then cut the jalapeños lengthwise down the middle, being careful not to cut the peppers completely in half. Remove the skins and carefully scrape out the seeds and skin with a spoon. Fill the cavities of the peppers with 1 tablespoon of the cheese-oregano mixture.
- Then, wrap one slice of bacon tightly around the stuffed jalapeño to seal in the cheese. Transfer to a hot grill (be sure to place the jalapeño on the grill with the bacon ends facing down). Cook until the bacon is crispy and cooked through, about 5 minutes. Serve immediately.
